Ingredients

  • 2 cups cooked rice (white or jasmine)
  • 1 cup chicken breast, diced
  • 1 cup pineapple chunks (fresh or canned)
  • 1 red bell pepper, diced
  • 1/2 cup green onions, chopped
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon ginger, minced
  • Salt and pepper, to taste
  • Cilantro, for garnish

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat. Add the diced chicken and cook until browned and fully cooked, about 5-7 minutes. Season with salt and pepper.
